I experimented this No oil Egg Plant and Soy curry recipe when I bought the stone pot. This turned out great, do try and let me know how it goes with you in the comments below.
- Eggplant cut into wedges, about five handfuls(I used eggplants from our garden)
- 1 medium size onion
- 1 large tomato
- ½ cup soaked,& steamed soybean.
- 2 tsp cajun seasoning
- Small piece of dried seaweed (soak in water for 10 minutes before adding, I used kelp).

Toss them all in stone pot, add two cups of water and let it cook for about an hour on medium heat. You will not be able to reproduce this in any other pot. This did not score many marks in looks department but it scored full marks in nutrition department.
If you are making it in a skillet, you need to add 1-2 tbsp of olive oil, cut down on water to one cup and cooking time will be shorter.
You can eat it by itself or have it with rice or pasta or avocado roti
